Sometimes when I enter the Engineering via the maintenance shaft from Med/Sci the music starts playing right away.
But it also happens that when I enter the music won't start until I go out into the "maze" of corridors.

You are hitting invisible triggers, which regulate music and ambient sounds. Or the music is just taking a break. But let's check the Modder's Bug Report Reaction Matrix:
